This wine displays punchy herbaceous characters of nettle and passionfruit with a touch of tropical fruit on the nose. There's no doubt that one of the matches made in heaven but available in New Zealand is fresh asparagus married to one of New Zealand's equally fresh and succulent Sauvignon Blancs.
And if you can find them at the place where they not only make the wine but also grow the asparagus, wine and food matching does not come much better anywhere in the world.

For the Waipara Winery not only produces very individual Sauvignon from the vineyards that were planted in 1982, but they also grow commercial quantities of asparagus. And this is the time of year when the two come together in their roadside cafe and tasting room. If you are in the area it's a must stop!
The 2013 version of the Waipara Springs wines continues their tradition for punchy, crisp and fairly dry Sauvignon and of course it is widely available for you to try with your locally grown asparagus. We reckon it would suit Vic's dish perfectly.
